This Kermit Lynch property values natural winemaking and uses very little sulphur in their winemaking practice if any at all. And while all their wines are quite nice, the Beaujolais Blanc is the true gem of their domaine. The resulting product is driven by green apple, bright citrus, and a limey/chalky minerality reined in by a touch of creaminess and lactic texture.
This is hard not to love and will match nearly anything you throw at it, although sauteed cod, snapper, and sashimi come immediately to mind. Wood aging has added extra richness as well as spice to the crisp apple and pear flavors.
